Air, humidity, sunshine and height are three enimies of coffee. Basically, venting the carbon dioxide from coffee bags, blocking oxygen from refluxing, averting humidity and controlling temperature are four points to store coffee beans.
In order to control the temperature of storage environment, many people freeze coffee inside fridge because they think this can conserve the freshness and flavor of coffee to the utmost extent. Actually there're some factors in fridge that influence the storage of coffee, and destroy the flavor of coffee easily.
The moisture of coffee will be evaporated because fridge is cold and dry, the aroma of coffee will disappear. We always store all types of food in fridge, which leave foreign odors inside and damage the flavor of coffee. Furthermore, due to the great differences of temperature from indoor to outdoor, condensation formed by the moisture of air attaches to the appearance of coffee beans, and ground coffee will agglomerate after being ground, which makes coffee can not be extracted evenly, influences the taste.
So even though the low temperature of fridge can defer the natural damage, fridge is not the best place for coffee to store.
However, if you really want to store your coffee in fridge, please make sure your one way valve and coffee package is sealed well.
